Tasty Thursday's: Strawberry Filled French Toast







Valentine's Day is literally coming up and what better way to show your loved one your cooking skills by making them some french toast. I would love to get breakfast in bed everyday, so if any readers out there would like to fill in my cook position for breakfast I will gladly accept. Haha. Anyways, my cousin sent me this recipe that she just made for her fabulous boyfriend. He loved it! So try it this weekend or on V Day. I'm going to try to cook this for my baby sisters this weekend, we'll see how it turns out.





INGREDIENTS:
For the filling:
• 1 cup sliced fresh strawberries
• 2 tbsp. sugar
• 4 oz. cream cheese, softened

For the toast:
• 4 thick slices bread, such as challah or soft Italian bread or Wonder Bread (same thing)
• 1 large egg
• ¾ cup milk
• 2 tbsp. melted butter
• 1 tsp. vanilla
• ¼ cup all-purpose flour
• ¼ tsp. ground cinnamon
• ¼ tsp. salt
• Unsalted butter
• Maple syrup, powdered sugar and additional fresh strawberries for serving

PREPARATION:
For the filling, combine the strawberries and sugar in a medium bowl and mix well. Set aside for 15 minutes, and then stir in the cream cheese until blended smoothly.

For the toast, carefully slice a pocket into the centre of each slice of bread. MAKE sure you do not cut it all the way through to the other side. Heat a large skillet on medium heat. In a baking dish whisk together the egg and the milk. Whisk in the melted butter and vanilla. Stir in the flour, cinnamon and salt and whisk until smooth. Fill the pocket of each slice of bread with some of the filling mixture. One toast at a time, place the filled slices in the egg mixture and let soak for 30 seconds per side. Remove the bread and place on the skillet to cook. Cook until golden brown on both sides. Repeat for every toast bread you have.

Serve with maple syrup, powdered sugar or fresh strawberries.
