Tasty Thursday's- Spicy Tortilla Soup



Hey Fabulous Readers!!!
I'm all about the quick and easy recipes- as I love to cook but do not want to be a slave to the kitchen. This week’s recipe is one of the most simplest and delicious entrees. I love soup in the winter and really love to try different things. So late last night (2am) I thought lets make it spicy. This is what I came up with. Yes I have all these ingredients at home. Grandma and I love to cook.

Ingredients
• 1 small onion, diced into little pieces
• 2 cloves garlic, minced
• 1 red pepper, chopped into little pieces
• 2 jalapenos, chopped into little pieces
• 1 teaspoon of dried oregano
• 4 cups of chicken stock
• 1 16 oz. can of diced tomatoes
• 2 cups of shredded chicken breast
• 1 diced squash
• 4 carrots, chopped into little pieces
• 1 can of corn (drained)
• 1 can of black beans

Toppings
• 1 cup of cheese (cheddar usually works well- don’t want to burn your tongue with even more spice)
• 1 ripe avocado
• Dollop of sour cream
So before you start anything, wash all utensils, pots, and your hands. Make sure you have enough utensils to use as well- or clean in between.
Let me just say... THIS IS DELICIOUS!!!!!!!!!!!!

In a soup pot, fry the onion, the garlic, jalapenos, and the peppers in a bit of oil until they are all soft. Once soft, add oregano, tomatoes, chicken, squash, carrots, corn, and black beans. Include the chicken stock and allow all the flavors to meld and simmer. This will take about half an hour. When everything is all ready, put a serving into a bowl and add crushed tortilla chips, the cheese, half of the avocado and a scoop of the sour cream. You can serve with a lime wedge and add some cilantro if you would like.

*** please note that you can leave the chicken out and grab vegetable stock instead to make a vegetarian version. Just make sure to add more vegetables.
